Requirements:
- Juice of one lemon
- Sea salt (1/2 tablespoon)
- Dried oregano (1 tablespoon)
- crumbled feta cheese optional (1/2 cup)
- Chopped fresh parsley (1/4 cup)
- Water (1.25 cups)
- Red onion diced (1/2 cup
- Cherry or grape tomatoes (1 cup)
- Cucumber chopped (1 cup)
- Pitted kalamata olives (1/2 cup)
- Yellow or orange bell pepper seeded and chopped (1)
- olive oil (1/4 cup)
Directions
- Put the tomatoes, onion, cucumber, olives, and ringer pepper in a bowl and stir gently
- In a little bowl, whip together olive oil, lemon juice, salt, and oregano
- Pour dressing on serving of salad and toss to mix
- Garnish with parsley and goat cheddar, if consuming
- Ready to enjoy!!
